I know a lot of people love hot sauce and red or any color hot peppers, but the heat overrides any other flavor so all one is tasting is the heat and whatever else one is consuming is just something to carry the heat to the mouth. The love is not the food item (that might as well be a kitchen sponge) it is the flavor of whatever heat one is using. I know that it is common for people my age to add the Capsaicin because years of usage have started to deaden the tastebuds, however, I still cannot see the joy of feeling uncomfortable. I do like a bit of cajun or creole flavored items, but only occasionally and pretty much only when I'm in New Orleans, which I haven't been for about 24 years ago.

I’ve been eatin’ spicy foods since I was a kiddo. My grandparents (on both sides) always had homemade hot sauce on the table.
As I posted, in the right amount, to me anyway, spice/heat enhances the flavor of whatever food you’re eating, and it does not make me feel uncomfortable at all. I tasted the crust, sauce, cheese, anchovies, and all, and it was really good. If I just wanted the spice, I wouldn’t use the food as a vessel, I’d just do crushed red pepper and Tabasco shots…!!!!! :hilarious:

And, we’ve also been to a few mud bug boils here over the years…!!!!! :hungry:

Love crawfish boils , eating the meat from the tails and sucking the innards from the heads. A number of really good places to eat these critters are in Houston TX.

Way back in the day, my youngest bro was a food expediter at a (now defunct) place here called “Pearl’s Oyster Bar”. I would always order the crawfish fettuccini, and my bro would make sure that a double portion of crawfish tail meat ended up in it…!!!!!!! :joyfull::hungry:
