That recipe actually looks good, but it's portioned for family size -- so, way too much for us. (Adds to list of excuses not to cook tonight.) :p
I did half because I wasn't sure if I'd like it. Just halve everything. You can also freeze the leftovers and it makes great lunches. Or when you're feeling lazy and you don't want to cook dinner, you have leftovers.

That works for some recipes, but not all. Sometimes when you halve the ingredients, it still doesn't come out right (in my experience). I do like your idea of freezing leftovers though. Do you take out the frozen package the night before, and then heat it up the next day for lunch?

It definitely worked on this one. I just cut back on the amount of sauce and used about a pound of chicken, and my brother was all over it. I think I'd probably go heavier on the sauce next time and throw in some veggies, though.

With these Instant pot recipes, you can just throw them in the microwave for a few minutes. No need to take them out in advance. I even found that the chicken taco meat froze pretty well, which I did not expect. The chicken tacos were sooo good, and they were so simple to make. I'll find that recipe, but it's four ingredients: chicken broth (I use bouyon to make a quick broth), chicken, salsa, and taco seasoning. I did refried beans on the side and bought guac and salsa fresca (because our grocery store makes both of those really well and I'm lazy). Turned out really good.

I actually picked up the freezing/reheating thing from my aunt because she works all week and cooks for one, so she does the freezing stuff on nights when she's too tired to cook. She says rice freezes well and so does chicken, beef, and veggies. Regular potatoes do not freeze well. Sweet potatoes apparently freeze well, but that's only if you like sweet potatoes to start with...
