X-Wings are cool and all but let's be honest, every Star Wars fan has wanted to say "Now this is pod-racing!" ever since the critically acclaimed Episode I graced theaters.
The ride vehicle Could be just the fuselage/cockpit part. The wings could just be part of the station load then the cockpit slides forward and out. You can’t see the wings from the cockpit anyway unless you turn around. New sequel trilogy variant could have pilot and gunner position for double capacity.

The pod racing scene in Star Tours is really as good as you’re going to get. A ride with a track isn’t going to do it.
Just like any normal rollercoaster except with themed loading platform.
Blue is stationary scenic in the loading area. Red is single car coaster vehicle. Normal coaster track in the floor.
