It really is a special event to watch live.
While I've always wanted to be at the Cape to see a launch, logistics for a non local are difficult at best.
I was lucky enough to see both a day and night launch from the World just by luck (as both were delayed from their original launch dates).
My favorite place to watch is in tomorrowland on the SM side of the TTA/Astro hub where the shuttle is visible just to the right of Space Mountain and arc's over it to the left.

I also was at Coronado Springs August 07 to watch that launch! it was awesome! we watched form the pool, and it came right out from behind the Pyramid! I can only hope I get to see the chance to see one again in the future!In August of '07 we went to Cocoa Beach for some surfing before we checked into Coronado Springs and were shocked to find out there was a launch that day! Got to see it up close right from the beach with thousands of cheering people (unfortunately all of those cheering people also clogged the toll road back to Orlando and it took hours and hours to get to Disney)
