Hoping the MIL will call and say to meet them somewhere to eat tonight :lookaroun :eek:

Usually happens on most Thursdays, as it's my FIL's day off, but if not, I have no idea. Maybe hamburgers. :lol: Too tired to really do anything elaborate

Corned beef and cabbage. My dad was in the hospital on St. Patrick's Day, so we had to postpone our annual Irish dinner until this evening. DH will be out of town for a few days so he'll miss it.

I had some chicken in the fridge, so I'm roasting those and I think I'll make chicken salad tonight.

The thought of anything "heavy" is just :hurl: inducing at the moment. :eek:

They only wanted the chicken on their salad, with dressing. Like a grilled chicken salad.

I went ahead with a chicken salad in the other sense, with the mayo and whatnot :lookaroun :eek: It is gooooooood.

Curse you Ina Garten! *shakes fist* :lookaroun

So Christy..what do you put in your chicken salad?

I LOVE it but can never find a great recipe..So I always get it from this deli around me..Whole foods also makes a good one..

I didn't have much around, so it wasn't anything elaborate. Usual mayo, celery, onions, mayo, a tiny bit of lemon juice, and grapes. The grapes aren't typical, I dont' think, but I'd had it once and they are really nice in it.

I think what makes it sooooo good is when you roast the chicken yourself. Skin on, bone in, just like Ina always tells us :lol: It really DOES make a difference though! Lots more flavor.

Went to TGIFriday's tonight...

tossed salad with ranch dressing, flatiron steak with mushroom butter (that had no mushrooms in it :rolleyes: ) and broccoli.
