Scrambled eggs, bacon, sausage, and creamed beef (SOS). :slurp:

:lol: Haven't had that since I was a kid living at home! I always said I'd make it for my husband, who has never had it :eek: but I forget! I'll try to add it to my grocery list sometime.

*sigh* Good memories :lol:

Oh! Is it kind of like sausage gravy, but... obviously with beef instead of sausage?

From The Joy of Cooking (1987 edition):
Creamed chipped beef 4 large servings
Do not salt this dish.
Pull apart:
8 oz. chipped beef ( I remember from my childhood, it came in jars)
Melt:
3 Tablespoons butter
Saute':
3 Tablespoons minced onions
3 Tablespoons minced green pepper
Sprinkle with:
3 Tablespoons flour
Add slowly, stirring constantly:
2 cups milk
Add the beef. Simmer these ingredients until they thicken. Remove from heat and season with:
1 tablespoon chopped parsley
1/4 teaspoon paprika
2 tablespoons dry sherry
(2 Tablespoons capers or chopped pickles - optional)
Serve the beef on:
Hot buttered toast

We are having greek food. Its our areas annual Greek Fest, celebrating its 98th year!!! Can't wait for spanakopita and bakalava and lamb. :slurp: yummy
