Caramel Apple Cream Pie​

(Serves 8)
  • 9 Inch Pastry Shell 1
  • Butter 1/4 Cup
  • Brown sugar 1/2 cup
  • Large Apples, peeled and cut into 1/2 inch pieces 4
  • Cinnamon 1/2 Teaspoon
  • Allspice 1/4 teaspoon
  • Nutmeg 1/4 teaspoon
  • Flour 2 tablespoons
  • Caramel Ice cream topping 1/2 cup
  • Walnuts, chopped 1/2 cup
  • Cream Cheese 8 Ounces
  • Sugar 1/4 Cup
  • Egg 1
  • Lemon juice 1 tablespoon
  • Vanilla 1 teaspoon
  • Whipped Cream As Desired
METHOD OF PREPARATION
  1. Preheat an oven to 350 degrees.
  2. In a large skillet, melt the butter and brown sugar; stir in the apples, half of the cinnamon, nutmeg and allspice. Cook mixture for 10 minutes, stirring constantly.
  3. Add the flour and mix well.
  4. Pour the caramel sauce in the empty pie shell and add the walnuts; spoon in apple mixture and set aside.
  5. In another bowl, add the cream cheese, sugar, lemon juice, the egg and vanilla and beat until fluffy.
  6. Spread this over the apples and bake for 40 minutes; then cool on a rack.
  7. Add remaining spices to whipped cream and serve with a dollop of spiced whipped cream on top of pie.

I am glad she is doing well then. It sounds like she is in a place that can take care of her.

The therapy people were really friendly, and I really hope Grandma stays there to get the treatment she needs.

There's a lot they can do with Alzheimer's now apparently, but it's still hard to watch a person's mind deteriorate like that.

I don't know what it is like to have someone with Alzheimer's. It sounds sooo empty of a life.:cry:

Between my grandpa passing away last year (and she had to make the decision to take him off life support), my grandma's steadily declining health, my sister in college exactly 1000 miles away, risk of her daycare/workplace closing and life in general... without showing it, my mom has gotta be one of the toughest woman around when all the odds are stacked against her.

But wanting to end on a good note:

OK - this goes back to about 8 or 9 years ago, but the saga continues.
Hallmark decided to declare Grandparents Day for some Sunday in September - strictly a Hallmark holiday. So a couple of years after my SIL passed away, her mother decided to have my brother's kids send a card to my mom for Grandparents day. OF course, I didn't, nor did any of my other siblings. Soooo the next time I talked to my mom I got a lecture about that (at the time I had never even heard of it!). So, the next year, my kids sent a card to my mom, to which she replied "Whoever heard of Grandparents Day?"

Fast forward to 2007. My grown kids haven't sent a card now for 5 or 6 years at least. I call my mom this afternoon and the first words out of her mouth are - "You know I have 20 grandchildren and 4 great-grandchildren, and not one of them evensent a card for Grandparents day?!!!" :brick::brick::brick:
That'll be you in a few years, though. :p

Hello...my afternoon of 'getting stuff done' consisted of looking at my house, which looks like a bomb detonated in it, and wondering how in the world I'm supposed to get anything done. :brick::brick:

Your mom sounds like a very strong woman. :sohappy: You must be very proud of her and visa versa.:kiss:

She's found some inner strength to draw on. It's amazing how you can do that when you have to. That, and the support she gets from the rest of you will see her through. Just continue to be there for her.
