We missed it last weekend because it closed a little earlier than the park, but yesterday, we got to ride CoP in the evening and I noticed Rover was sporting a new coat in at least the first three scenes. (The fourth looked better groomed but it was hard to tell if it was new or not.)
The photos aren't great simply because it's hard to take a non-flash photo without a tripod all that clearly without spending way too much time with a very bright LCD screen disturbing everybody, but if you're familiar with the ride, you'll notice what we did - Rover's coat is now darker, cleaner and much better groomed. Previously he was in some sad state in most scenes and his "fur" looked awful. It's a lot nicer looking now and the darker touches really stand out.

Also in the obsessive someone-who-rides-it-every-time-they're-at-Disney sort of way, there were some new, pretty teacups in the sink in the 1940's. This is the best shot I got of them, sorry.
And, one more obsessive detail, the pitcher of iced tea in the 20's looked new as well. The reason I noticed was just that it stood out. The old tea pitcher always looked really fake and faded. It just was kinda sad. Yesterday it looked much darker in color. So they either dusted it and washed it off, restoring a more tea-like color to it or they put in a new one. Either way, improvement!
Edit Aha! And if you look at this picture, you can see that the actual position of the tea and the glass have changed. They've reserved. The pitcher used to be on the right and now it's on the left. Knew it was different!
John's newspaper in the first scened looked different as well, featuring a more "glossy" look and a big image right on the front. Try as I might, this is the best I could manage. It's a crop and I sharpened the heck out of it, but maybe it gives you an idea. It looked different to me, though honestly, I can't tell you what it looked like before, just that it looked different.
Anyway, just a few little touches I noticed. Seems that now and again, Carousel of Progress does get a little cleaning and much-deserved maintenance after all.
