Several years ago, I had the chocolate lava cake at the Flying Fish. It was deep chocolate with a warm liquid center! I had never tasted anything like it!Then when my husband and I returned, they were no longer making it, much to our sadness. Our waitress, who I'm fairly certain was the same waitress we'd had the first time, told us the chef had left and taken the recipe with him. Later that same trip, however, we found a similar cake at the Kona Cafe. It wasn't quite as good as the original, but it was better than other recipes I've been able to track on the web. Someone would be a saint if they could give me the either recipe!

Kilauea Torte, Polynesian Resort

Ingredients:
1 cup melted chocolate chips
1 cup heavy cream

Scald the cream in a saucepan, pour over melted chips, stir till thoroughly mixed and set aside to cool.

Cookie Dough:
1 cup butter (unsalted)
1 cup sugar
1 tsp. vanilla
1/4 tsp salt
1 cup sifted cocoa poweder
1 1/5 cups all purpose flour


in an electric mixer cream butter and sugar till smooth. Add vanilla and salt and mix well. Combine cocoa and flour and add to butter. Mix until just well blended. Mixture will be slightly dry. Form into 6 medium and 6 small balls using all of the dough. Place med. balls into buttered muffin tins dusted with cocoa powder. Press dough evenly to the sides of and bottom of tin. Flatten small balls into circles large enough to cover the tops of the tortes. Set aside.


Next - make the peanut butter cream

1 cup peanut butter
1 1/2 cup sweetened condensed milk

combine ingredients and mix well


Assembly:
place one tbsp of the peanut butter mixture into bottom of the prepared large muffin tims. Pour 1/3 to 1/2 cup ganach over peanut butter in tins, filling almost to the top of the dough. Cover the tops with dough circles and press firmly to seal. Chill for 30 minutes then place in a 350 degree oven for 25 minutes. Remove and let cool completely before removing from tins.


To serve, heat tortes in a 200 degree oven for 5 minutes. remove, place on plate and top with whipped cream.

1/2 oz. Light Rum
Fill with POG Juice
Top with Jack Daniels
Serve in a Hurricane glass

You could call or write to the Poly and ask for the recipe, alot of times they will send it out.

Dips from Spoodles on the Boardwalk

Baba Ghanoush

Ingredients:

1 eggplant, whole, pierced
3 oz. jar tahini
¼ cup garlic, roasted
1/3 cup lemon juice, fresh
Salt - To taste
Tabasco Sauce - To taste

Method:

Pierce the eggplant over the entire surface.
Lightly coat with olive oil.
Roast to 350º for about 40 minutes, or until they collapse.
Allow to cool.
Remove the skin.
Mix with all the other ingredients.
Puree in the food processor until smooth.
Adjust the seasoning.

Chermoula Dip

Servings: 4

Ingredients:

¾ cup chopped cilantro
4 cloves garlic, crushed
1 teaspoon cumin
1 teaspoon paprika
¼ - ½ teaspoon ground chili pepper (optional)
6 tablespoons peanut or extra-virgin olive oil
Juice of 1 lemon or 3 tablespoons wine vinegar

Blend everything together in a food processor.

Hitipi Dip

Servings: 2

Ingredients:

1 Pound Feta Cheese
6 1/2 Ounces Yogurt, Plain
4 3/4 Ounces Sour Cream
1/2 Ounce Garlic, Roasted/Puree
to taste Kosher Salt

Place all the ingredients into a food processor or blender.
Process until smooth.
Store refrigerated.
Serving ideas: Serve with bread as a dip or on sandwiches

Made the pineapple bread from the Polynesian today. It was absolutely mouth watering. It was gone in a matter of seconds (my friends are food whores) I'll make it again in a few days and take a picture of it.

Request Please!

This one is a bit out of the way I know but.....
Does anyone have a recipe for the spiced cake they serve for birthdays at San Angel Inn at Epcots Mexico? Its individual servings - and I've only had it once but WOW was it good....Anybody?

Does anyone have a recipe for the Canoli you can get in Epcot at one of those little booths around the lake? I havae looked and looked and have never seen a recipe. Fantastic and out of this world!

Welcome aboard! :wave: Here is a recipe from the Food & Wine Festival. You can buy cannoli shells already made in the grocery store, fill them just before serving. Enjoy!

Cannoli
(serves 4 people)

Cannoli Shells

* 1/2 cup all purpose flour
* 1 tsp. crisco vegetable oil
* 1/4 tsp. sugar
* 3 tblsp. red wine
* pinch of salt
* egg white (1 each)

Method:

Mix all ingredients together with dough hook (or by hand). Mix until the ingredients form a ball. Cut dough into four pieces and roll each to about 1/8 inch thick round. Wrap around metal cannoli tubes and attach with a little egg white. Fry in hot oil for about five minutes until dark brown.

Filling:

* 6 oz ricotta
* 2 oz Sugar
* 1/2 oz chocolate chips
* 1/2 oz candied orange peel
* 1 pinch vanilla powder

Method:

Mix all ingredients until well blended. Pipe into cooked, cooled cannoli shells.

Canolis are something you just can not find in the UK. I have enquired in many an Italian restaurant and deli, but they have not even heard of them!

Really? Thats a shame; as a kid I always helped my aunt make the filling (and stealing the chocolate chips).

Whenever I tell any Americans you can't get canoli over here they are surprised as it's such a common item over there. My sister found something in reverse - every Chinese resaturant and takeaway over here sells Prawn Crackers. She has never seen them in America, so when I visit it's another thing I have to bring over with me.

Joe, I looked these up and I have to tell you they really don't sound all that appetizing. :hurl:

Trust me. Prawn Crackers are good, and I don't even like prawns or prawn flavouring. They cover them in more-ish magic powder!! :lol:

Well, I guess I've eaten worse things before (ever have kidneys?), but if they smell fishy, and that was part of the description, I can't do it.
