My first trip was in 2003, so I don't know many of the things you all are missing. I have to say I miss the old Test Track.
You are quite welcome to that, but I must say, the new queue is far superior (can't say the same for the ride, really, so I feel your pain in that respect).

Epcot used to have these people on stilts with wings like butterflies come out & dance in world showcase. Does anyone know what these were called? Anyway I miss that. I also miss the original Mexico ride without 3 cabelleros & the original sea ride without nemo. Does everything have to have a cartoon uhg!

Much like a lot of people, I miss Spectromagic and the Sky Ride.
I miss the original version of Test Track.
I miss the original Main Street Bakery and the selection of pastries they had from about 1995-2005.
I miss the Contemporary Resort Tennis Club. (Now the site of that monstrosity called Bay Lake Tower)
I miss the wide variety of well made, creative merchandise that used to be sold in the stores.
I miss the quality of the food that has gone consistently downhill since the introduction of the Dining Plan.

The last item, I have noticed since the dining plan, portion sizes have also decreased. If they keep reducing the quality so they can show better revenue numbers for wall street then they are going to drive this product down. It is noticiable to the frequent visitors maybe those that come every 10 years or so don't pick up on it as much as we do? Like I have said in other posts UNIQUE is what made Disney Parks what they are.
Lots of little things add up to big ones.

All the money I have given to Disney.....

If you miss the money, then maybe you should have not given it to them or stop giving to them in the future. I don't miss the money because of all the fun we had and the memories that we keep. Disney now just gets less and less of my money based on my perception of value and quality for the amount I won't miss.

River Country was pretty cool but I was just a kid, so maybe I would feel differently if it was still open.

Horizons and Mr. Toad. I liked the old river del tiempo ride in Mexico.

I liked when each hotel had its own soap and shampoo.

The Disney Village of the early 80's was much nicer than it is today, at least there were some unique shops.

But the thing I miss the most is Disney World before DVC. Ever since its inception the World has been progressively going down hill.

I could also say that Disney World pre Eisner was much better. I know he made a boat load of money for the company, but didn't care for his corporate NYC approach. All aspects of the WDW resort got worse on his watch.

My complete list would be pretty long, and include classic attractions like Mission to Mars, the Skyway to Fantasyland, Horizons, and the original Animation tour when they were really working on Disney animated movies (anyone remember seeing artwork from Mulan in there?). But the two things that come quickest to mind would be the Lights of Winter in Epcot and the Off Kilter boys.

The Lights used to be a really important part of the Christmas vibe in Epcot. You could see them from all around the World Showcase. And standing under the arches while the show was going on was a totally unique experience. And I've been enjoying Off Kilter for years (at least, the original lineup of Jamie, Randy, Mark, Tony and Scotty Z.). I was there for their final set, and it was truly a special performance. They will continue to be missed.

who thought it was agood idea to replace them with Lumberjacks? what were they thinking?

As with many above, the full list would be long. One thing I really miss was having a large number of cast members, not just a small handful, waving goodbye as you walked past the Fountain of Nations post Illuminations. Whether or not they did, it gave you a feeling the park operations, or at least Guest Services, cared that you just dumped a large sum of hard earned cash into their bottom line.
