We arrive at the World on December 13. Have been trying to finish planning "extra activities" that we might want to do within the budgeted amount I have left. We're trying not to plan too much but we had to nix the safari so was seeking a replacement. Think we're going to try the Segway tour at Epcot.

We're in FL from the 4th to the 11th. Just doing Disney stuff a couple of days, SW one day, and assorted reveling on other days.

The segway tours are great fun - have you reserved it yet?

Haven't booked it yet, will do so this weekend. Glad to hear you think it's fun. We certainly thought it looked like fun. Since breakfast is included, I think we're going to do it our first full day there which is all Epcot. We have reservations for the Candlelight Processional that night. Sounds like a great way to start off the week. We're doing MVMCP and Fantasmic the middle of the week then the Dessert Party our last night. We each picked one special thing we wanted to do besides MVMCP and I tossed in the DP for fun.

Really wanted to do the safari but I just couldn't justify the $400.00 this trip. That's a lot of food, ha.

I'm hoping I can get him to wear his graduation ears for at least part of the trip...18 year olds can be well you know weird at times want to have fun but be cool at the same time ;) He has no ideas he's got the ears coming.

My brother-in-law and his wife do the majority of the cooking, but others are known to bring stuff too. We're in charge of rolls and desserts, but we've learned that everyone brings pies too, so I do more 'finger food" type stuff for the afternoon, a parfait-thing that I'm required to do

That sounds intriguing....what does this parfait thing consist of and why are you required to do it?

We've nicknamed it "death by chocolate". It's a layered thing with brownies, Heath bars, chocolate pudding, and whipped cream. I made it once for a specail occasion several years ago, and ever since, I'm not allowed to show up without it. I've redone it with low-fat Cool Whip instead of real whipped cream, but it's still a bit, well, rich....

Enjoy! If you can't get reservations for the Epcot Segway tour, try the Fort wilderness one. We've done that too, and had a great time.

Sounds great....is the Cool Whip really gonna make any difference with all that other stuff??

It's really easy, but you have to start it ahead of time. You need to bake your favorite brownie recipe (13 by 9 pan), break up 4 - 5 Heath bars into bite-size pieces, and cook up a batch of chocolate pudding (I use 3 large boxes with 6 cups of milk to make it reasonably firm). I generally make the whipped cream right before I put the thing together. After thepudding and brownies have cooled, layer them in a trifle dish, starting with the brownies, pudding, Heath bars, and whipped cream, then repeat the layering. I chill it overnight the night before just so the flavors meld, but you don't have to.
