I was hoping for more of a french influence to this menu. I think the options sound good, but still don't strike me as distinctly french. More of French for Americans....

I'm really surprised by the dates. From the pics they've been showing lately (of things that are generally some of the last to be installed, and the finished look of everything in the background) it seemed like they were much closer than that. In the other areas, you could tell when an area was about to open by the pavement going down. From the latest aerials, it looked like that was in the process of happening.

I'm still betting (completely only based on observations and conjecture) for an opening of August for TLM and the outside areas of BatB, with the restaurant opening in September. Probably the same timeline for CircusLand. Shops in August, meet and greet and food location in September.

I would be SHOCKED if everything isn't up and running by October (that would also let them get all of the kinks worked out before the holiday rush).

i agree with some of this. i do think that by September things should start opening (probably have said this a million times :D ), but i don't think October is good enough for things to be substantial. when they say everything's out until the holidays, i sort of do take them serious. by the end of November things should be done 100% for BatB and TLM.

i'd say maybe the village is good and out in September, early October TLM opens and then mid November Be Our Guest opens and lets in the reservations.

I was hoping for more of definitive date as well. We're know they're taking reservations in August but that's about it! It's still opening "Holiday 2012" and no idea about soft openings! Ugh!

We should know better by now to expect this sort of thing; )

Well, at least now we know, when we will know, when the Be Out Guest will be open, so it's a small step in the right direction.

The problem, as you point out, is that we are only basing this on things we can see, we really don't know what is going on behind the scenes, or with things that aren't obvious in the pictures.

True, but pretty much all food at WDW is <insert country> for Americans. I think that the only place they really try to be somewhere in the vicinity of true to the culinary origins is World Showcase. It did not surprise me in the slightest that the food here would be fairly French-by-the-way-of-America. Remember, the MK's version of "Exotic Food" is basically the Taco Salad at Pecos Bill (which I love by the way, but not in a culinary adventure kind of way, but more in a gluttonous "I'm on vacation" kind of way ).

And I don't think that this is in anyway the full menu. I mean the title of the blog post was "Chef of Be Our Guest Restaurant in New Fantasyland Shares His Favorites from the Menu". I guess the full menu is still not out there, probably made up of things the chef either was asked not to share for now, is still in the process of finalizing, or is made up with the typical American staples for those who don't want to try anything new (Le Hamburger).

Even with World Showcase, slowly over time the menus there even started to be "dumbed down" for Americans. The Rose & Crown used to have more traditional English menu items, such as steak & kidney pie (hah, and my wife thought it meant kidney beans, not real kidney!), and now it is a much smaller menu and more generic. When these restaurants originally opened the fare was more what Americans would expect to see if they were in those actual countries, and now it is pretty much the same thing you would find in your local non-chain Mexican restaurant, irish/english pub, etc.

anyone think that the late august date for doing adr's kinda sounds like ...."as soon as everyone is hired and training starts we will begin taking adr's". I wonder if they are going for job postings mid july. Maybe that is where this late june early july rumor meant. That would make a lot of sense gives them a month to start training or more if they need it hire in july start training mid august. It appears that disney doesnt like to give any information until after they have everything in place. I think new fantasyland will be operational a week before the walls come down.

I don't think the dinner menu will be much bigger than what was mentioned. Thye listed a beef, poultry, fish, pork and veggie dish. This all sounds like many of the other menus. Perhaps there will be 0ne or two more items. I am not that excited about it as nothing sounds that much different. I imagine that what the chef actually does with the listed items could be imaginative.

Does anyone know if the Dinner service will feature characters? I would assume they wouldn't during lunch since its quick service but was wondering about the dinner service. Curious if its was going to be character dining. Thanks in advance.

In the comments of the blog article, the author responded to that question saying it would not be a character meal.

Forgive me, but I'm not "up on it" when it comes to tracking every little rumor so forgive me if these have already been settled in the "community."

1. When the Grand Floridan Spa reopens, the spa at Saratoga Springs will be closing for a similar refurb.

2. The "glow ears" from World of Color will be incorporated into MK's nighttime entertainment.

3. Avatar Land WILL make DAK a full-day park and feature a nighttime spectacular.

4. Avatar Land will feature a "flex" restaurant similar to "Be Our Guest" that is quick-service by day, table service by night.

5. Sorcerers of the Magic Kingdom will be "locked" on easy mode until September at the earliest. This is due to overcrowding of the portals, not technical issues.

6. The next "articulated character" to be developed is Beast. The "core" characters have articulated heads at Dream Along With Mickey and other stage shows. Baloo and King Louie also have articulated heads on the cruise ships.

7. River Country/Ft. Wilderness DVC has been cancelled.

8. Major changes coming to DHS sooner rather than later. Details are fuzzy but some old blueprints have risen from the ash heap of WDI.

9. Decisions HAVE been made regarding Downtown Disney. I don't know what those decisions are, but I'm told an announcement won't be far off.

The restaurant will have meet and greets with Belle and Beast in M&G rooms, not the dining areas. Lumiere will be the "pre-show" for these M&Gs. As I understand it, Lumiere will be some of the most intricate AA work they've ever done because he's so small and needs to be so fluid. I've heard rumors that watchmakers were used as consultants or even manufacturers for certain components.

When I found out about the Beast character I hadn't made the connection to BOG but that makes perfect sense. I'm not going to confirm because I don't know for sure, but it certainly meshes. Not sure if it will play out because the info I had is that Beast will be DEVELOPED next not "be show ready" next. To be clear, I'm 99% sure that they do NOT have an articulated Beast ready to go but that there is one in the works.
