I actually asked someone who was working Avengers Campus about Mantis and he said that she doesn't show up on non dance party days (the day I asked there was no dance-off), either he was wrong or I didn't stick around long enough to see her. I saw Gamora and the girl Black Panther on that same day, though.
There’s a dance party every day unless starlord is unexpectedly unavailable

They didn't have the dance-off this past Saturday. Mantis did a meet and greet a couple of times alternating with Groot & Gamora.

The CMs err on the side of caution as they don't want to promise something they can't deliver. Also, they aren't told everything.

Random thought I had the other day while in the park and a bit late, but I think its a bit restrictive for current Disney parks to be only using MCU characters and whatever Disney+ thing they're doing at the time, rather than the full breadth of iconic characters Marvel holds. I feel like theres no reason that characters from the comics or animated shows cant show up in the parks (not for Avengers Campus just in general). It's just interesting to me that their view of Marvel is so rigid and has to be MCU when you could argue that many of the characters that haven't gotten their MCU movie are still just as iconic as Mickey Mouse.

Moon Girl has been meeting in Hollywood Land since her animated series debuted. Before that they had a Spidey & His Amazing Friends backdrop photo op where she currently is.

But restrictions on comics characters may be in place due to the Universal contract since they use the comic book versions of the characters in Orlando, not MCU. It may also just be a branding choice to distinguish between the parks.

I’m shocked Moon Girl hasn’t appeared in the animation courtyard at Hollywood Studios. The lineup is stale and there’s no contractual issues with the character.

Project Kiwi coming soon to Avengers Campus?

"I am Groot! Fans of the loveable Flora Collasus Groot have something to get excited about. We’ve heard some top-secret happenings in Avengers Campus that a young version of Groot may be headed to Avengers Campus this summer.

Disney California Adventure has been conducting small group testing of this incredible little animatronic. The lucky participants have been invited to jam out with Groot as part of a special Guardians of the Galaxy Awesome Dance Off. This project has been in development for at least 2 years."

"As part of the Awesome Dance Off, Groot and Star-Lord interact with each other and have a dance off. Groot is able to talk and react to Star-Lord with a surprising amount of mobility and different motions. Groot doesn’t move his legs much, but he’s an amazing animatronic.

We expect to hear some sort of announcement about the new character experience very soon."

Baby Groot lives in a pot. This is kid Groot.
Not according to Disney.

Their description for the I Am Groot shorts is: "a collection of five original shorts starring Baby Groot, everyone’s favorite little tree,"

Disney also uses the designation Baby Groot in merchandise such as:

So Baby Groot is what they call the kid version, not just the pot version.

Technically, though, they are all Groot. :)
