We did twice on our last trip this past January. One time we had to wait about 15-20 minutes but the other time we walked in, said "party of 4" and they seated us right away. Not quite as magical as if it had happened during Christmas week or anything but we were still pretty happy.

We always check-in around 9am and then head straight to EPCOT to use DDP points at Sunshine Seasons for breakfast. You can start using your park tickets and dining points immediately after check-in even if your room isn't ready yet.

Are you not planning to buy many souvenirs? I have always wanted to take only one checked bag but I know I will buy too much while I'm there and it would be too much to ship it all home.

Get to DHS at park opening and head straight for where they are doing the sign-ups(last time I was there it was in Sounds Dangerous.) Bring your child with you because you can't sign up without them.
