I've noticed that the two things disney can play fast and loose with are room rates and giving free dining.

The crowds won't be bad for most of your trip. You will see the crowd levels increasing as it gets closer to the 24th, but the crowds will not be anything near the level of the week from xmas to new year's.

If you have a car to go to the grocery store, I'd recommend going to the Walmart on rte 535, since it has a grocery store in it and there prices excellent.
