The remains of the southwest salad with cilantro lemon dressing, added an entire thin sliced sweet red pepper to bulk it up. Sweet potato gnocchi, with fresh zucchini and peas in a creamy sage sauce.

This was my dinner, and it was super tasty.

This is the sweet potato gnocci...from trader joes. I highly recommend it.

Ever have the Cool Ranch Dorito Locos Taco from Taco Bell? I read online you can recreate the shell by spraying crunchy taco shells with cooking spray and sprinkling dry ranch seasoning mix on them before baking. We had them for dinner. I ate 4. Yum is an understatement.

I don't go to Taco Bell. Even driving past one makes my tummy hurt. But your taco shell technique sounds interesting!
