Help! Need chicken recipes

Sure, I could just Google "chicken recipes" and come up with some stuff, but I figure there must be at least a couple people here who know how to cook.

So, here's the deal: I eat friggin' chicken practically every day. Eating healthy, blah, blah, blah. But it gets boring to make the chicken the same way all the time. I usually just dice it up, throw it in a pan with some seasonings by whatshisname, Elmo or Ermil or whatever, and cook it until I think it won't give me salmonella. If I have red peppers or banana peppers, I'll throw those in there, too.

But I need to diversify. And it has to be healthy. Spicy is good. I like spicy. Don't give me nothing too complicated either. Or weird. Don't want nothing weird. Like llamas or crayons or fish heads or nothin' like that.

This is REALLY lazy, but works great (otherwise known as mom's we're camping this week and I'm only dirtying one pan recipes)
Walmart carries their own brand of salsas, they have a "black bean and white corn" one. It has almost NO fat, and the whole jar is like 500 calories (the size of a spagetti sauce jar)
So..get chicken tenderloin, saute it, shred it some, put the jar in, and as it cooks, it will shred some in the sauce, serve with brown rice, it is REALLY killer for an easy meal. Spicy, filling, and different!!
OR..put the chicken in foil (this is mom's making dad cook while we're camping) put 2 tbs or so of the salsa on it, wrap tight, put on grill and cook until done, FABULOUSLY tender this way!

I like to take boneless skinless , spray them with a little spray butter (very light), sprinkle with garlic and bake in oven. Doesn't take long and is very easy. Don't let bake too long or they will get dry and hard.:(You can always but some great marinate sauce and marinate for flavor. Terriyaki sauce is great for this. I like it with onion and garlic. While you're cooking your chicken, try tossing in some stir fry vegetables instead of peppers for a change. Get your protein and vegetables in one shot.

You don't have to eat only chicken. Portion control is the key. Sirloin pork chops are not too bad. Not too fatty and would give you more options. Of course, there's always fish but that tends to be a little more complicated to cook properly.

I will have to look in the Dana cookbook and find some more...you also can venture away from chicken you know..and try something else besides green beans please..:hurl::lookaroun

I told him the same thing...but he is worried about high sodium sauces and he does not like onions:eek:

He is also stubborn..:animwink::lol:

I'm all for stir fry when it comes to chicken. :slurp: I do the same with beef, shrimp and pork...

I use the WalMart brand of stir fry veggies (it comes in a few varieties) as everything is all set for you and they have no sauce. I cut up the meat and quick stir fry it in a tablespoon of oil and then remove it from the pan. I put a bit more oil in the pan and quick stir fry the veggies. When they are just about done (it only takes a minute) I throw the meat back in and finish it all up. Just before I take it off the heat I drizzle in a bit (about 2 tablespoons or so) of my favorite salad dressing or some hot mustard sauce from McDonald's (or onion ring sauce from BK) and serve it with rice or noodles. I also eat it plain at times 'cause I'm lazy. :lookaroun

Its low fat, low calorie and low carb which is good for me. :cool:

This is a simple one.
Honey-Lemon Chicken

Mix together 2 tablespoons of honey, 1/2 tablespoon of Lemon Juice, 1/2 teaspoon dreid rosemary leaves, and a pinch of salt.
Preheat broiler. Spray broiling pan rack with Pam Cooking spray. Place chicken on rack; spray top of each chicken breast. Broil for 10 minutes. Baste chicken with honey-lemon mixture turning chiken over. Broil another 10 minutes. Baste with remaining honey-lemon mixture and cook additional 5 minutes. Serve with brown rice.

I eat steak once or twice a week. Usually I'll have steak and eggs on Saturday or Sunday mornings. Sometimes both. As for fish, no need to make any suggestions. I don't eat anything that swims! :hurl:

I resemble that remark! I tried your Italian dressing thingie. That was good. I look forward to more suggestions from you. Food suggestions. (I know I have to be specific with you!) :animwink:

My dad has this one recipe for chicken with peaches and other seasonings on it. The whole peaches thing sounds weird, but it is so good!! I have the recipe if you're interested...

Those are great. I use them on almost everything, including chicken and burgers. For chicken, I would recommend using the Mt Olympus Rub(Greek style seasoning), Renaissance Rub(Italian style seasoning) and the Rasta Rub(Caribbean Jerk seasoning).

Oh man - I use those all the time - they're fantastic!

I also use a little lemon-pepper spice rubbed into each then broil and serve with baked potatoes. Yum!

This one sounds a little complicated but it really isnt at all after you get everything prepped it's a snap. It does have alot of ingredients though...
This is spicy spicy but if you like Thai food you will like it and it is well balanced heat not a tongue torcher kind...:ROFLOL:

Seasoning Mix
2 tsp. salt
1 tsp ground cardamom
1 tsp cayenne
1 tsp. ground coriander
1 tsp ground cumin
1 tsp ground fenugreek
1 tsp garlic powder
1 tsp ground ginger
1 tsp dry mustard
1 tsp onion powder
1 tsp black pepper
1 tsp white pepper
1 tsp ground dried chile peppers
1 tsp ground turmeric

6 boneless, skinless chicken breast halves
3 tbsp olive oil
1 1/2 cups chopped onions
1 cup chopped green bell peppers
1 cup chopped red bell peppers
1 cup chopped yellow bell peppers
1 large ripe banana, peeled and sliced
2 cups chicken stock
1 tbsp minced fresh garlic
2 tbsp minced fresh ginger
2 tbsp + 2 tsp all purpose flour
1/4 cup chopped fresh cilantro
2 tbsp seeded and finely diced jalapeno peppers ( I leave this out, sometimes)
1 14 1/2 ounce can diced tomatoes

Combine seasoning mix ingredients in small bowl

Sprinkle each side of the chicken breast with 1/2 tsp of the mix and rub it in well.

Heat the oil in a large skillet over high heat just until the oil begins to smoke, about 4 minutes.Brown the seasoned chicken about 2 to 3 minutes per side, then remove from pan.

To the same skillet add 1 cup of the onion, 1/2 cup each other bell peppers, the banana, and the remaining seasoning mix.

Cook stirring and scraping occasionally, for 10 minutes. If necessary, to prevent burning, add 1/4 cup stock and deglaze the pot, you may also have to lower the heat to medium.

Add garlic, ginger, and flour and stir until the flour is thoroughly absorbed. Add the remaining bell peppers and onions, the cilantro, and the jalapenos. Cook for 5 minutes, then add the tomatoes and remaining stockand return the chicken and accumulated juices back to the pan.

Bring to a boil, reduce heat to low and simmer until the chicken is done 10-15 minutes.
I serve it over Couscous but it is good over rice too. :wave:

Here's one we invented called "chickaloccoli." It's a low fat version of Greek style chicken.

Marinate 2 boneless skinless chicken for a few hours in lemon juice. (We use ziploc bags). Put the chicken and the marinade in a glass baking dish. Surround the chicken with small pieces of broccoli and/or cauliflower. Sprinkle on diced bell pepper, onion, portobello mushrooms and minced garlic to taste. Use an olive oil spray to coat the vegetables, and drizzle EVOO (extra virgin olive oil) on the 2 pieces of chicken. Sprinkle the chicken and veggies with some fresh chopped rosemary, some Cavendar's Greek spice to taste, and top it all off with a light coat of Italian seasoned bread crumbs.

Cook in a preheated 400 degree overn for 25-30 minutes. Serve with rice (we usually season the rice with a little butter, EVOO, Cavendar's Greek spice, and some of the drippings from the cooking pan.)

I love spicy. And I love Thai food. There aren't any good Thai restaurants in the white-bread suburb where I live. :mad:

There is a really good place out by River Forest me thinks... havent been there in a while... but they are awesome, not expensive, and great portions. :slurp:

I know... its closer to me... than you.. but it might be worth checking out.

I came back to this thread looking for dinner ideas, and wanted to add one that Dana gave me. Simply marinate the chicken in Italian salad dressing and banana peppers (the ones that come in a jar, not the fresh ones), cook it and serve with green beans! :D

(Hey, Dana, I know you're gonna punch me for including the part about green beans, but that's OK 'cause I've been working out and I'm ready for you, baby! :animwink:)
