So it was my turn to make dinner tonight. I made shrimp and grits. Turned out really good even though I used frozen, grocery store shrimp instead of fresh shrimp, because that is what we had.
Sautéed some onion in olive oil using the cast iron skillet, added some roasted red peppers, a can of diced tomatoes (drained), minced garlic, basil, a pinch of oregano, some black pepper, some red pepper flakes and then once that seemed about right I put in the thawed shrimp and sautéed for just a few minutes more in order to not overcook the shrimp. It still needed something...a few (OK, several) dashes of Texas Pete hot sauce. For something I just made up as I went along, it was pretty darn good, except maybe I put too much butter in the grits...nah, nothing wrong with buttery grits.
Too busy enjoying it to even think about taking a photo, but it was good. High calorie and carbs, but we still get a treat every now and then. I am going to have a biscuit tomorrow too.
