Good morning all!! I had to sleep in this morning! I was exhausted from all the running around yesterday!
Getting prepared for my first colonoscopy end of next week. Gonna kill my eating healthy all next week! You can't eat a lot of what I eat before it.:( @figmentfan423 gonna lose a few lbs. in not a fun way!
Today gotta make some caramel apples for Halloween. Found a healthy recipe so excited to try it!
Breakfast is shredded wheat, dried cranberries and almond milk. Lunch is turkey sandwich and carrots. Dinner is lentil salad that was supposed to be last night but switched.
Hope you feel better and get rid of that nasty sneezing @real mad hatter! @LuLaSue that is going to be a fun trip!! Take me with you!!!:) Anyone heard from @MR FERRET yet?
My salad recipes are always some kind of vinegar-red wine, white wine or balsamic and extra virgin olive oil. Sometimes I add honey or agave syrup and Dijon or coarse ground mustard to kick it up!
Ok gotta move it!!! Everyone be healthy and safe!!:p

You too...As far as Mr Ferret goes, nope...Hope that gale didn't blow him away...Looks like we're not in
Kansas anymore..On a serious note..He may be having a hard time with his friend in the other island not keeping well..Will keep my eyes open..:cautious:

Yea for he Vita-Mix! Now let's get you off those creamy dressings. Have you tried silken light tofu in place of mayo in dressings? Home made dressings take a bit of work to get the taste just right. Maybe put a bit of mustard you really like in them or if sugar is calling your name maybe some stevia. or maybe get a few healthy cookbooks and try new things and if it sounds good but doesn't quite work out feel free to experiment. I know you can do it. Great idea about going to the parks to hike but remember going around your own neighborhood is cheaper as you don't have to drive at all. Every little bit adds up.
Silken light tofu...they have a shot for that over at the health department. You can get it while getting your flu shot.

You are right. some of the homemade dressings I tried would not have helped with any salad. Gotta keep experimenting! Have substituted sugar for stevia and tolerated it quite well. Made a honey mustard dressing that was ok, but but too much honey in it, but will keep experimenting.

@epcotisbest another thing I do with salads is just sprinkle some herbs on my salad add a bit of vinegar and lightly mist with olive oil. You can buy oil misters at any kitchen store and I've also seen them at stores like Target and Walmart
I'm not familiar with oil misters...I'm more of a pour some on then pour on some more kinda guy. Gotta work on that.

The Dijon with honey may help with some of my concoctions. No wine, but have tried balsamic and like the kick it adds. Used apple cider vinegar as a salad base before, but did not have the rest of the ingredients balanced right. It did work as a veggie dip, but too stout for a dressing.

Here is you a recipe for that cider vinegar...
Mix 1/4 c. honey, 3 T. Dijon or coarse ground mustard, 3 T extravirgin olive oil, 11/2 T cider vinegar, and, salt & pepper to taste. Pour over mixed greens or spinach, add 1/2 c. thinkly sliced onion, 1 small apple-granny smith or any crisp apple will do. Can even add 4 oz goat cheese, crumbled or feta. You can change up the amts of any ingredient and adjust to your taste.
Hope you try this and like it!! You can use some of those apples you got up here!!;)

Here are some salad dressings you all might enjoy!!

Tarragon-Balsamic Vinaigrette
2 T balsamic Vinegar
2 T evoo (extra virgin olive oil)
2 T honey
1 tsp Dijon mustard
1 tsp dried tarragon
salt and pepper

Roasted Red Pepper Vinaigrette
2 large roasted red peppers from a jar or do your own
drizzle of honey
1 clove garlic
2 T balsamic vinegar
salt and pepper

Pour either vinaigrette over mixed greens. Can add any other salad veggies.

I have to share this recipe with you guys. I just made them and they are yummy!!

Caramel Apples
1/3 c. packed lt brown sugar
1/4 c. agave syrup
2 T light tub butter
1/8 tsp salt
3 T chopped nuts
6 small apples

Wash 6 small apples and dry. Insert popsicle sticks or sticks for apples you can find at Walmart. Line a baking sheet pan with wax paper and spray with cooking spray.
Combine sugar, syrup, butter and salt in a medium pot over medium heat. As soon as mixture starts to bubble around edges, stir constantly for 1 minute. Add nuts and cook, stir constantly, another minute, until mixture darkens in color and sugar is dissolved. Remove from heat. Spoon about 2 T of mixture on each apple as you turn it. Place on wax paper. Let set about 5 mts. Let cool for 30 mts. Can store in waxed paper for 1 day. Or, refrigerate up to 4 months.

Mine will not last for 4 months--possibly 1 day. LOL:hungry:
