i'd say mgm. we got there about 10:00 AM, were done by 4:30 without really skipping anything. it was definitely the least amount of walking, so it's a good park to do late in the week when everyone is tired. someone else posted a complaint about there not being enough to do there, but we felt it was just right and it was nice to have a park that could be easily done in less than a full day.
we squeezed ak into a 1/2 day, but we had to skip a few things to do so. next time, we'll spend a full day there.

I would say that Epcot is one of the more involved parks if you do it right. ANd I would never miss being there at night. AK is the way to go for a shorter day, as the animals are out early, and most of the attractions can be done in the park quickly. It also doesn't have a big night life, so hitting another parks Evening EMH on that day might be the way to go.
Here's an actual breakdown. You must not have stayed for Fantasmic either.

As far as an order of the four parks goes, (#1 needing the most time, #4 needing the least) I would say:

3.) Disney's Animal Kingdom
4.) Disney-MGM Studios
