We already looked up some recipes, but we have to wait until we have time to test them out. Today is my last day at my job, and E had a test yesterday and now has a week off because she doesn't have to do any retakes of tests because she already passed everything. So we might be able to do something this week, but I just came down with some respiratory thing...not sure what it is, but it's uncomfortable. I'm not really motivated to do a lot.

Sorry to hear you aren’t feeling good but glad to hear it’s your last day at that job.

My mom had an enchilada recipe that she made when I was growing up, but it was definitely not authentic and I didn't like it. I remember it was topped with American cheese, and had black olives in it. Not my thing. But I don't want to use that recipe....I want real, autentic ones, like you get in a restaurant run by an actual family from Mexico.

I used to work with a guy whose parents were originally from northern Mexico. He lived with them for a few years after he graduated high school, and his mom would make him breakfast and lunch to take to the office. She used to use a lot of authentic Mexican chorizo (fresh, uncooked pork sausage that can come in or out of a casing, but is removed from the casing to be cooked, mostly spiced with chili peppers), and machacado (a dried, spiced meat, usually beef, that is often reconstituted and cooked). Definitely some of the most delicious, satisfying food I’ve ever eaten, as he had extra to share from time to time, and knew how much I loved it all…!!!!! :hungry:
As a result, I know that any breakfast taco that’s advertised as containing chorizo, that isn’t dripping a red-brown grease from it, doesn’t contain authentic Mexican chorizo…!!!!! :hungry: :hilarious:

We had a snowstorm. Dumped many inches of the heavy wet stuff in very little time. It’s like a Christmas card out there.

I’m at the house in Brantford by myself.
Three of the neighbour men plowed and shovelled me out, including the entire four car driveway, sidewalk, and front steps.

Then one of them knocked to ask if he could put two cars in the driveway so they don’t get plowed in later when the snow plow comes. One car would be blocking me in. No problem, I’m not going anywhere tonight!

The other place I’m not going tonight is back to Lindsay. I’d already planned on calling in sick - Mike is there to work, so no biggie - but now I’ll just use the roads as an excuse. They are a mess!
