I'm going to attempt to go to work today...we'll see how that goes. My stomach is still a little rumbly.

I've got a lot of stuff that needs to get done and if I can make it though half a day, I'll consider the day a success.

Good luck!! It may help just to get out for a bit.

It's not just that you've created and displayed another tasty meal, (my sammies never look that good, nor do soups out of a can from Campbells . . . ), but what also stood out here was that you used spinach, instead of lettuce. I never thought to use spinach in a sandwich, and I'm going to try that this weekend. Thanks for the tip!

As a side note, one time I visited Ireland; and they often used thin, sliced cucumbers in their sandwiches. That took a little getting used to, but I think I'd like your spinach idea right away! :)

Spinach is good in wraps too. As the final topping for sandwiches I mix cucumber, tomato, onion and bell pepper chopped small and mix with a zesty Italian dressing. Good taste and crunch.

I would soooo be back in bed if I didn't have to drive my son to school. He neglected to renew his bus pass yesterday (the 1st), which tells me he didn't go to school at all yesterday.

OK guys I have a cooking question:

I made some Greek meatballs with ground turkey this morning before work. I mixed them out and formed them into meatballs but did not bake them yet. They are on a sheet pan in the fridge so I can pop them in the oven and bake them them up quick when I get home. Ingredients are ground turkey, 1 egg, bread crumbs (I used panko), plain Greek yogurt, herbs/salt/pepper and olive oil. So on the way to work I realized I forgot the egg. They are already formed into meatballs, but uncooked, so I COULD go home, smush them all into a bowl, add the egg, re-ball and then bake. Or I can roll the dice and cook them without. The egg is just a binder, right? They formed pretty solid meatballs. And I'm just eating them on a plate without putting them in sauce (so breaking apart isn't an issue) or I may put them in a pita with lettuce, tomato and red onion. Do you think I really need to add the egg or will it be ok to just bake them?
