Some ideas:
Brazil - would add South America, the Portuguese language, and the fifth-largest country in the world to World Showcase. Could feature lush tropical vegetation, a monumental Sugarloaf Mountain/showbuilding, and a skyway ride that takes you inside it and on a tour of the country. They could also put on a little Carnival-style street party.
Russia - the largest country in the world, and another rising global economic power. For this one, WDI could just dig up the plans for their old Soviet Union pavilion. Maybe put in an Ice Bar where Pumbas Nagasak can get some vodka.
India - another rising global power, as well as the most populated country in the world. A Bollywood-style show or movie would be great here, as would a curry restaurant. Could be a little too similar to Asia at AK, though.
Greece - as the cradle of Western civilization, this one would be a great and fitting addition to World Showcase. They could set up the whole pavilion as a mini-Acropolis, with lots of different ruins to explore as you climb, and with a main attraction on top. Maybe build a shopping complex in the all-white style of Santorini, or feature a movie documenting the history of the Olympics.
Spain - the only Western European country missing from WS, and it's a shame too. Spain's food is the best in the world, and they could really feature that in a Spanish pavilion. Maybe have several small tapas restaurants, so guests could walk from restaurant to restaurant collecting tapas just as they do in Spain. A flamenco show would also fit the pavilion nicely.
