Funnily enough, I've Done almost every ride in each park, but here are the few that I don't bother with anymore.

MK
Enchanted Tiki Room UNM (Don't hate it, but don't want to spend time with it)
Aladdin's Magic Carpet's (got dizzy the 1st time, don't want to relive that.)
Hall Of Presidents (Actually like the show but same as above)
Peter Pan's Flight (wait is alway's HUGE when I'm there, good ride otherwise)
Snow White's Scary Adventure (It's okay, not worth bothering though)
Cinderella's Carousel (Kid ride)
Dumbo (Kid Ride)
Winnie the Pooh (Wait is a tad bit too long)
Tea Cups (kid ride)
Toontown (No Explanation needed.)
Indy Speedway (Too long of wait, not worth it,)
Astro Orbiter (Don't really care for it.)
Monsters Inc. Laugh Floor (Really hate it)

Epcot
Parts of WS (No time when you've got a fastpass to Soarin')

DHS
RNR (Never did it, probably never will)

DAK
It's Tough To Be A bug (freaks me out, like the show though)
Kali River Rapids (Too wet, too big of a line)
Any ride with a major line (yep)

DHS:

honey I shrunk the kids movie set

hall of presidents is the only thing we skip intentionally every time... we generally plan on doing everything we all want to do first, and then base everything else on "hey, there's no line over at (insert attraction name here)!" so we don't focus on what not to do, just on what we're in the mood for

Probably the only attractions that we skip are Sounds Dangerous and HISTK playground at DHS. We skip the playground since our little ones are now full grown women, so this isn't Disney's fault, but Sounds Dangerous is just vastly inferior to the previous Monster Sound Show. Disney did a huge injustice to the subject of "sound" in entertainment, by removing one of the best (and funny) shows on the property. The fact that it needed 100% volunteer participation, each show was completely different making it highly repeatable (IMO). it always provided the biggest laugh of the day. Replacing it with a non-participatory show in the dark was a huge mistake to me. Bring Back the Monster Sound Show!!!

Three I always skip but this time I WILL see/ride:

Enchanted Tiki Room: UNM -- to see if it's as bad as everyone says, I liked the "previous" management a lot as a child

Astro Orbiter: even when I was a kid we skipped this for some reason, but since I learned that you yourself control the ride going up and down, I'm gonna try it at last

Aladdin Magic Carpet: skipped it before because it's for kids but it looks like fun

The only attraction we ALWAYS skip is Dumbo. We've experienced most other attractions at least once on a vacation someplace, but we always always pass on Dumbo.
