The missing letters in this sign used to be in the bottom of the frame, and they spelled out "You are doomed". They've taken that out of the attraction, though.

I know I was so mad when I saw that. That was such a cool feature. For some reason I remember it saying "Tower of Doom" when I saw it.

That could very easily be the phrase. It's been so long since I saw it, I probably am remembering it wrong. I still look to see if it says anything, but it seems that they've never replaced it.
