I really enjoyed the empanadas at La Cantina last year. It is the only CS meal I plan to have on my next trip.

EP - Sunshine Seasons

AK and HS - we've not tried any counter services in either of these parks yet!

Magic Kingdom
Columbia Harbor House for fried shrimp and fish
Casey's Corner for hot dogs and corn dog nuggets
Pecos Bills for burgers and pulled pork

EPCOT
Sunshine Seasons for chicken, desserts and stir fry chicken
Snacks around World Showcase

DHS
Starring Rolls for giant cupcakes

AK
Flame Tree BBQ for chicken
Nice to see Starring Rolls mentioned many times in this thread. I enjoy it as well and there really is not much to choose from in DHS. Pizza Planet is cool for families with kids.

It looks like everyone is posting dining options in the parks only. I highly recommend Captain Cooks at the Polynesian. Just hop on the monorail from Magic Kingdom and enjoy a great meal in a beautiful setting. It is a casual counter service that serves sandwiches and light fare. My favorite is the "Grown up Grilled Cheese" sandwich served with homemade chips. The serving is big enough to share too! Also, don't forget about Earl Of Sandwich at Downtown Disney! There is enough on the menu to eat there every day of your trip and not have any repeats! I keep wishing for an Earl to open here at home but until then I'll have to wait for my yearly trip to WDW!
