Disney stick with the theme of a hotel. Crazy.

A lot of Portuguese, Irish and French in New England and yet no restaurants in the Yacht and Beach Club. Not saying that they would work, just saying that Disney doesn't stick with the themes sometimes.
Yeah, but in regards to Jersey. Those cuisines aren't as nearly as prevalent as Italian or even Asian cuisine in NJ.
We do have a lot of Irish owned bars where I live. Could have made for a nice restaurant but I guess they didn't want to step on Raglan Road's toes.

I think, more importantly, there's already plenty of italian options near there already.

Epcot and Mama Melrose.

So, not really required. I'd rather see something more unique to the venue. And, if they were just going for something different and exotic to attract guests, why not a tapas restaurant?

Spoodles was more of a tapas restaurant when it first opened - the menu quickly became more ordinary because people didn't like it.

Spice Road Table serves the equivalent of tapas, and it's usually empty.

Tapas just don't work with WDW's typical clientele.

Maybe replace the pizza carry out with Nathan's? I'm not sure if that would be enough space for it though.

Just a few steps away from the Boardwalk Pizza Window they have Boardwalk To Go which offers hamburgers, hotdogs, chicken baskets and anything else along those lines you can think of. It's actually very good though I am thinking they may need more space.

Yeah, but it's not Nathans.

Disney hot dogs, on average, are terrible...

I can't say what kind of hotdogs they use (personally do not eat them) this is a non Disney owned CS! The last time I was there my friend got one and it was huge and came with a very large portion of fries.

~edit~ They also offer probably the largest Corndog I have ever seen! So if that is your cup of tea this is the place to find them.

I'm not sure either, but the ones served at places like Caseys and Fairfax Fare are very bland.

I'll have to check that place out!

You should! Though it offers mostly junk food it has become one of those places we seem to always stop at for a snack or light meal at night.
BTW some of our favorite things to get are:

Cheese Fries
Fried Raviolis
Mozzarella Sticks

And my friends really like the Chicken Fingers and the Hotdogs

Sounds like a good concept for there, I walked past Kouzzina when I was down last year and looked at the menu didn't really look all that interesting, I had dined at Spoodles years ago and really don't even remember what I had or how the food was, this sounds like a safe bet as far as food goes, I honestly wish they would do something with Tony's Town Square as well since that food is ummmm, pretty blah
May be Blah -- but there is always a long wait to get in - even with reservations - so they must be doing something right!!

I can see why they are putting such a place in that location. All the parks but AK have at least one Italian Restaurant within them. However, the Boardwalk is a place anybody can go to for an evening out. I feel Disney is doing this to get more locals, who don't have AP's and such, to come and enjoy a nice, albeit expensive, meal with a great ambiance. Also, why not grab a few drinks at ESPN and go hang out in Jellyrolls while there? Pretty clever really.

I guess so... They still already had Il Mulino and Portobellos for people to enjoy outside the parks.
