Others have already given some great answers but how about:

- Speeder bike through the Endor Forest (Return of the Jedi)

- Snow Speeder ride where riders harpoon AT-AT walkers (Empire Strikes Back)

- There are a dozen walk-through attractions they could create. Just walking the bridge of a Star Destroyer would make fanboys living in their Mother's Basement weep happy tears.

This biggest no-brainer is a restaurant ... how this hasn't been fast tracked is beyond me? They love adding restaurants because those are direct money makers (see: World Showcase) ... and people would actually travel to eat in the Cantina from Tatooine.

That is because George Lucas did not want a Star Wars restaurant the way Disney wanted to do it.

Disney just wanted it themed but Lucas wanted characters walking around and interacting with everyone and a Cantina Band performing. Disney said the costs would be too high to offer such a interactive performance.

Even though they have virtually the same experiences in a dozen other restaurants? Sorry, if that's the excuse they are using it doesn't make sense with the proliferation of character meals over the past 5-10 years.

Agreed completely.
I would LOVE to reverse time and get Hitchcock back. A FAR superior attraction, and one that was much better suited for that location.

But, I'm sure some folks might call Hitchcock stale...lol
no hitchcock is classic. stale is something that doesn't hit with new generations. TOT is not stale, and won't be- that show is an iconic piece of americana, and is still good, watched today- same with hitchcock. Shrek was cute, but we saw it once, and that was enough.

If you want to go high-end Star Wars land that matches the thematic style of cars land this is what I would do...

This world would be all indoors and would be themed to the indoor hanger of hoth. Every detail from sounds,ice smoke, huge digital IMAX screen to represent the outside world of hoth with movable hanger doors that close to give the illusion the guest are being protected from impending snow storms.
I'm talking life size falcon you could walk through much like the tree house.
Inside this world would be a restaurant, shops and two e ticket rides, and an area of props and archive footage from the movies and sneak peeks of things to come.
1. The thrill ride would be a recreation of the falcon run through the asteroid belt while being chased by the empire.
2. The dark ride would be called Star Wars: the power of myth and would take us through the journey of the skywalker family. I could see this ride taking us to the swamp planet of degobah, the lava planet of mustafar. This ride would be about the constant struggle of good vs evil in the stories of myth.

I would give those thoughts to imagineers and let them come up with several solutions on how to create the rides.

This would be my answer to cars land. An emmersive recreation of one of the most iconic scenes from the entire Star Wars saga.

For Disney land, I would look to create a thrill ride called the Death Star Trench run. Again letting the imagineers come up with the best solutions for the ride. Roller coaster? Combination dark ride? I just know these rides would draw the crowds like no other.

Anyway, that's what I would explore.

Really? Disney fumbled the ball on this if that was their actual argument. I've been talking about putting this in the Studios for years...it's a no-brainer. Do they have any idea how many 40-something males like myself would make that trip? It's the one eatery where getting gouged wouldn't bother me (hmmm....maybe I should delete).

Yeah, I don't get it, especially now that Disney owns Lucasfilm. It's very odd to me that they don't seem eager to monetize the rights in the parks (in addition to movies and merchandise, etc.) since it's a pretty sure fire way to get positive ROI. Just simply stuff like the Cantina would be relatively quick additions that could increase revenue quickly.
