I haven't tried that. We have a lot of baked sweet potatoes.@MOXOMUMD. Have you ever tried them par boiled until almost done, or use canned drained sweet potatoes, with red and yellow green peppers and onion? You saute' the onions, and peppers together along with the par boiled sweet potatoes until tender, or if using canned, saute' just cooked the peppers and onions together, and add sweet potatoes until they are warm. I love this as a main dish, or with fried pork chops.
