We grew up with fluffy dumplings. The first time I ate dumplings that were basically strips of baked dough I didn’t like them at all.Well, in spite of it being pretty much the same ingredients, chicken and biscuits are not chicken and dumplings. But, there is nothing wrong with chicken and biscuits, it's just that I prefer C & D's much more.
What we like depends on what we grew up with a lot of the time. My Mother made chicken and Dumplings but never cooked them long enough so the center was basically raw dough. I grew up liking that and now I find properly cooked dumplings to be dry. I still like them but cannot bring myself to just cook them for less time. I still like them dry as well where the gravy gets to soak in more.
I have a friend here that used to make extra C & D'd and bring me some "left overs". She made the typical southern style with Dumplings that closely resemble pasta (flat squares). They are OK, I have them at Cracker Barrel often. When thanking her I once mentioned that I grew up with the fluffy type. That went over like a pay toilet in a diarrhea ward. She hasn't made any for me since then even though I like what she made too. It must have sounded like I was saying that hers were awful. Chefs are a sensitive group, I say!
