Using the line that Adam Savage used at the end of Mythbusters: "Want to know why we did what we did, and didn't do what we didn't do?"
Obviously Imaginears thought about Tatooine - elements of which they clearly mimicked in design, and certainly thought about Coruscant and likely every other Star Wars locale.
They did what they did because of various reasons.

Let's just be fair and say they didn't use Tatooine or Coruscant because neither have appeared in the new sequel trilogy and are thus of no consequence to Disney's view of Star Wars.
Except Tatooine and Jakku are pretty much the same thing.

They should have given us Canto Bight so guests could drink, gamble and bet of horse racing.

Forced perspective. Not sure if you've been to GE or not, but the "scale" and feel of the mountains aren't much to be written home about (imo). At some places near the ROTR area, its hard to even see the ranges near the Falcon (by design or not, I don't know).

At any rate, at least its more visually striking to look at than beige.

Forced perspective can't make it look like the city around us extends 100+ stories. There's also a reason we don't see Coruscant from street level, as it would be incredibly overpowering. A canyon of giant metal goliaths. And for me, I'd rather visit a remote outpost with history and adventure than a giant metropolis that's New York's business district times 100. I don't need an overwhelming cold city, we're close to downtown LA.

How about a real arcade like Flynns? Populate it with retro arcade cabinets, pinball machines and no ticket games. All games are a quarter per play. Add a pizza place and maybe a bar and your set to go!
You're making me miss Disney Quest...but yeah, do a fully retro Flynn's somewhere on property and I'm there! I've always thought that's how they should have had you enter the TRON area, but I'll take what we're getting. I say they make it 80s night every night too while they're at it, but that's just cause I'm an old fart who's still living in the past.

In full disclosure, I'm an idiot and keep confusing Coruscant with the Cloud City, Bespin.
Wherever they go at the end of Empire... that's what I'd like.

Unless Disney wants to build an entire land with raised platforms and bridges over mirrors and smoke machines to give the illusion of a floating city, I don't see it working. And even with such elaborate design, it would be ruined the moment people threw pennies onto the mirrors or dropped trash or random leaves blew into the land.

So instead they purposefully designed a dirty looking place with bullet holes and peeling paint on the walls.

Bespin is too enclosed. It's just a series of hallways with art deco. Good for a ride not a land.
It could work for both imo but it would probably have to be a land inside a giant building to work. And imagine the get frozen in carbonite experience. I mean, who hasn't wanted to be frozen in carbonite? The freefall and then slide to the antenna ride would be epic. I actually think Cloud City would make a great dark ride since some of the most iconic imagery from ESB and all of Star Wars occurred there.
