When guests bring it up I tell them that we are meeting them at that part of their story. For Mary Poppins we meet her during her "Jolly Holiday". For Tiana and Naveen, after they were married. At Epcot, you meet Belle in her village dress, but if you participate in Enchanted Tales With Belle you see her before she meets the Beast for dinner and falls in love with him. Just different points on their timeline. All wibbley-wobbly timey-whimey.

Prince Adam made a second deal with the Sorceress to bring Gaston back to life, but in return she transmogrified all his household staff back into housewares and made him a beast again.
So long as she has her library, Belle doesn't care one way or the other.
