as always food looks good in the pictures, looks like a cross between the skillets at whispering canyon and trail end, lets see the prices.

dinner skillets at whispering canyon are 38.00, expect about the same price.

I know that you are referring to serving size, But honestly, there is no comparison between Polite Pig and Whispering Canyon, IMHO. The Pig wins hands down!!! Seems like Disney "tries" for good BBQ, But they can't seem to get the right taste combination, at least that what my taste buds tell me!
There is just no way they can make great BBQ. If you have had it at Franklins or other great places, it's just never going to come close....I know that you are referring to serving size, But honestly, there is no comparison between Polite Pig and Whispering Canyon, IMHO. Of course not. But my hope is that the BBQ is decent enough for a theme park restaurant.

The food will be the same old cr@p they serve in all other counter service, just with BBQ sauce added 
At least it will be a (nice?) air-conditioned space to get out of the heat.

Probably won't win any awards. But if can be on the quality level of Garden Grill or Whispering Canyon, I think that is a win. I am interested in knowing the pricing given that this isn't a character meal but of course is still located within the parks...
Is your point that they are incapable, or that they would be foolish to try to produce such quality in that location for operational or logistical reasons?

Yeah, Polite Pig is exceptionally good BBQ for a QS place at Disney Springs, but it's still not comparable to truly great BBQ.

"Truly great BBQ" is SOOOOO subjective, and I would venture to say, geographically determined.
I'm in KC, where BBQ is nothing like Texas or NC. Now we've added Florida BBQ to the mix.
