As to Ratatouille, I'm surprised to be honest. I'm all for any dark ride, so I can't say I'm unhappy about it, but the film bored me and I didn't finish watching it (just didn't hold my attention).
Wow, really? Interesting. In my opinion, Ratatouille is by far the most mature, engaging, and original of all the Pixar films. It's definitely my favorite, and I've now seen it three times with different groups of people, all of whom loved it. I particularly love the ending; I consider it to be one of the rare Disney films whose ending didn't feel entirely predictable. It left me feeling all fuzzy inside.

Of course, the wonderful thing about taste is that everyone's is different. And one of the interesting things about WDW is that the success of a character or attraction isn't necessarily connected to the success or even artistic merit of the original film. Tinkerbell is now a beloved character whose reputation is quite different from her beginnings in Peter Pan, and Splash Mountain is a phenomenal ride even though many guests have never seen Song of the South.
But man... I loved Ratatouille. Between it and The Incredibles, I'm becoming convinced that Brad Bird can do no wrong.
