Because the whole point of the changeover is to get away from human trafficking.

Huh? The scene as described in the post you quoted would not have had anything to do with human trafficking.

She would not be for sale, but the pirates would all want to bid on her. That would be joke. That there is no human trafficking and drunk womanizing pirates are drunk womanizing pirates. The modern twist would be the part where she scoffs at their catcalls and fires a warning shot at them, thereby cementing her status as a strong female pirate who ain't nobody's wench.

Instead she's this weird cheerleader who just wants everybody to get drunk.

They changed it because adult children just "cant even"...

You mean they put their phones down to watch the attraction? (EDIT: guess that would more refer to teens who I thought you were talking about at first, lol ... whoops, but actually some adults are terrible about this. I see so many on their phones during the ride trying to book a FP or reservation or texting someone or trying to take pictures ....)

The first scene with the mermaid and skeletons on the beach are now gone?

It's still there, but returned to the way it was in 2011, so the wrecked boat, mermaid skeleton, and mermaid song are gone. The focal point is again the skewered skeleton with the gull on his head.

Movie Villain Waterfall mist curtain is still there.
"New" talking skull before the drop is still there.

seeing how the redhead has been changed, imagine what they’ll give us if they decide to fix the yeti in AK

A lot of people are confused by the idea of pirates auctioning items to other pirates. It makes sense to me.

How else would they distribute the loot amongst the crew? Split the grandfather clock into 20 equal parts?

It makes sense to let the crew members bid on the items they want (rather than fighting it out). This held true for the "bride" auction, and it holds for the current one.
The issue (to me) is that you don't ever really see a pirate with a grandfather clock or even have a need for one. I figured they would sell all the items for gold or some form of currency. They basically live on a pirate ship so there is really no need for the items they are auctioning. Pirates want gold and rum. That's the kinda the whole point of the attraction. At least it was

There are so many interesting ways they could have gone with this change. Were they really so pleased with the line "ten for a hen" that they went with a chicken auction?

I don't have any problem with them updating the scene in line with the fact that the concept of auctioning off women to lusty drunken men might not seem so hilarious in 2018, but this is not a very creative update. It also doesn't look from the videos that they've done anything to tweak the lighting or general show quality to approach that of the Disneyland version and maybe compensate a little for the change.
I agree that the "buy a bride" thing needed to go, but the change really isn't all that funny, it's just kind of bland. I think they could have used a few more women pirates in the scene, except instead of wanting to auction off the jewels they want to keep it for themselves, checking themselves out in the mirror like in these concept images, and the little woman next to the Auctioneer should have been a pirate, but be the craziest one, with a sword in one hand and a bottle rum in the other, covered in jewelry and necklaces, still doing her little "twirl" move showing off all her new bling... they should treat them all like Disney villains, so greedy, selfish, and rotten, that it's funny how over the top they are...

and I really didn't expect them to change the main joke of the scene, which was "there's an auction going on, but all the guys bidding... are only interested in the red head". I think that joke would be even funnier now that she's not part of the auction, they don't even care about the auction, they just want the red head, and then ever time they yell "We wants the Red Head" she fires off a shot across their head like other people have mentioned, I think that'd be hysterical. I do prefer the Disneyland Paris version on the new pirate red head, I guess I thought that's what we'd get in Florida, she seems more "stoic" in Paris, closer to the original version of the character.

You're right though they held on to the chicken line, which was like the least memorable thing in the original scene, instead of thinking about making something new that was just as crazy as the rest of the ride

If you want to argue that the fantastical elements distract from the otherwise real-world aspects of the rest of the ride, that's one thing.

Saying that having one magic skeleton beside another, slightly different magic skeleton is splitting hairs.
Point is that the mermaids are better served having their own scene instead of being awkwardly ducktaped to an unrelated scene based on them sharing skeletons as a visual motif.

The original scene basically implied that these are the remains of some guys that fought over the same treasure. The sacrificed mermaid skeleton they added doesn't have anything to do with that story, being part of that whole convoluted process to make the Fountain of Youth function. The projected mermaid singing Jolly Sailor Bold doesn't really add much to the scene either. Like she's just kinda singing at an old open grave like some kinda goth kid, it's not like they restaged the pirate skeletons in such a manner to suggest that they were devoured by her.
