I think it's more likely that they'll wait until the film comes out, sees if it makes major money, and then proceed (or not) on the ride based on the film's popularity.
Disney is never proactive on stuff like this. They always wait until the film property is dead and buried before they ever get around to building a park attraction. Just look at the American Idol show.
Hell, they've got as close as a sure thing as you can get on new movie franchises coming up with Prince of Persia and TRON and we haven't heard word one about potential park attractions. Or look at LOST - it's only been the most popular show on television for 5 years, yet nothing in DHS. Same with Star Tours 2 (geez, you think it might have been a good idea to refurb the ride while the new trilogy was in the theaters?).
I wouldn't hold my breath on the Monsters Inc coaster unless they've somehow managed to put a princess or faerie in the film.
