They don’t and the elevator is tucked away into a corner, which is typical for attractions that have it as a second mode of exit

No. Both this pathway and the pathway directly to the Coral Reef Restaurant will eventually close and were intended to be temporary until the paths around Spaceship Earth to the hub could be re-opened.
I've kinda gotten used to the one by coral reef! Bummer.
There will at least be a new bypass along the northern edge of Journey of Water that takes you directly there even after the existing backstage one closes. Not quite the same, but similar effect of making Coral Reef less of a dead end than before.

How could you say that?? It's the most tame, basic, uneventful roller coaster Epcot has had in its entire history!!
