And when not buying Lego or gardening, I bake.
Just bought 30 pounds of butter for Christmas cookies, and will still need more.
I bake for 3 weeks after Thanksgiving and give it all away.
Last year we made 75 trays.
Also tweaking a diabetic friendly banana bread recipe, making the third try today.
First 2 we’re good, but…..always room for improvement.

I feel your pain as I have to bake gluten free, dairy free and try and keep refined sugars low, tweaking, always tweaking. Good luck!

If you get the banana bread right, and don’t mind sharing the recipe, I’d love to have it. I’m part of a group that helps with meals for a residental home for adults with disabilities and several residents are now diabetic - meaning all their food needs to keep that in mind (the residents that can’t have sugar don’t like being excluded or receive a different meal than those who are not - they just don’t understand). Therefore, the staff asks us to just bake/ cook ‘sugar free’ but it’s not always easy!

Thanks so much - I'm not that great of a cook/ baker - so figuring out when I can substitute splenda, ect and how much to use has been a challenge for me. I had some sugar free chocolate chip cookies that were an absolute disaster. :cry:

We use the Toll House Chocolate Chip cookie recipe for our Christmas trays.
Its not a favorite of mine but Ma likes it.
I have a jumbo CC cookie recipe that I like and maybe I should try working on that but I really like brown sugar.o_O
