Caribbean Meatloaf

Meatloaf:
  • 1 1/2 pounds lean ground beef or turkey
  • 3/4 cup Quaker® Oats (quick or old fashioned, uncooked)
  • 3/4 cup finely chopped onion
  • 1/2 cup catsup
  • 1 large egg, lightly beaten
  • 1 tablespoon Worcestershire sauce or soy sauce
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons Caribbean jerk seasoning or Mexican seasoning

Topping:
  • 1 can (8 ounces) crushed pineapple in natural juice
  • 1 jar (9 ounces) mango chutney
  • 1 jalapeño pepper, finely chopped (optional)
  • 1 tablespoon chopped fresh mint or cilantro
Heat oven to 350°F. Combine meatloaf ingredients; mix lightly but thoroughly. Shape meatloaf mixture into a 10 x 6-inch loaf on rack of broiler pan. Bake 30 minutes.
Drain pineapple, reserving juice for another use. Combine pineapple, chutney, jalapeño pepper and mint; mix well.
Remove meatloaf from oven; spoon 1/2 cup pineapple mixture over top of meatloaf. Continue baking 20 to 25 minutes, until meatloaf is to medium doneness (160°F for beef, 170°F for turkey). Let stand 5 minutes before slicing. Serve with remaining pineapple mixture.
Makes 6 servings.

Here is the only thing that should be in meat loaf:

Ground beef
Salt
Pepper
An EXTREMELY light smattering of onoin and garlic powder
An egg
Some bread crumbs (Italian or Plain)


And Hunt's Tomato Sauce on top.

That is all.

Shredded carrot and potato give this meatloaf additonal flavor and texture.

INGREDIENTS:

  • 1 pound extra-lean ground beef
  • 1/2 pound ground pork or ground chuck
  • 1 cup diced onion
  • 1 large baking potato, shredded
  • 1 medium carrot, shredded
  • 1/2 cup vegetable broth, or chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large egg
  • 1 1/2 cups soft bread crumbs
  • 1/3 cup ketchup
  • 1/2 teaspoon herb seasoning mixture
  • .
  • Topping:
  • 1/4 cup ketchup
PREPARATION:

Heat oven to 350°. Combine all ingredients until blended. Pack into a lightly greased meatloaf pan or loaf pan, or shape into a loaf and place in an 11x7-inch baking dish. Bake for 1 hour. Pour off excess grease, spread 1/4 cup ketchup over the top of the loaf, and bake for 20 to 30 minutes longer.
Serves 6 to 8.

The smoke was really thick at MK at park opening today. Later the wind shifted and it cleared out. We are getting some dark clouds and thunder right now at POR and the radar shows some close storms so mabee it will knock it down a little.

It was miserable this morning. I could barely breathe, and a lot of my co-workers were coughing and having a really hard time performing. Thankfully, it cleared up and we got some rain around 4:00 :)

I live about 1 mile from the fire, and saw that it was in a construction site. They have started to evacuate homes right next to it, and tomorrow is not looking pretty good for me, considering I might be evacuated too.
