In the picture above, the ascending left-hand turn near the top left corner is a better example of a helix. It's the element right before the flat spin.

As far as the switch tracks go, they are rotating pieces of track. Once the train clears that section, it will rotate and point to a different path of track.

Here's a picture I drew in paint ~1 ago when we could still see the track...

The middle piece rotates and on one side has a piece of track that juts out to the side (not shown) that will connect with the "new" track course.

the standard thing to do would be to have the train start going backwards when they run into the yeti, no?

3) Does anyone know yet if the Yeti will appear more that once?

The Yeti will only appear once, but you will hear and see evidence of the Yeti throughout the ride, but you will also see some other creatures.

I just returned from WDW and took a bunch of photos of Everest. They have now removed the scaffolding from the top of the smaller “mountain.” They are also nearly finished covering the mesh, and have begun planting many more trees.
