Disney Salmonella Outbreak Probed

But point being that I'm probably right about cross-contamination?

:sohappy: :sohappy: I knew that nutrition class would pay off someday!...and I really enjoy being right!

BTW - Were they fresh tomatos or canned? And assuming they were fresh, would they even have an expiration date? I thought that when produce went bad, it just went bad...in other words, just rotten & gross, not toxic!

The outbreak source was prepackaged, diced Roma tomatoes served at six Disney World restaurants, Orange County epidemiologist Bill Toth said.

I assume they were canned, because it says the were prepackaged "diced" tomatoes. Unlikely they came in a box that way!:)

then they were nasty when they came out of the can. After having managed a salad bar with the deli/bakery, I can offer you a good description what tomatoes look like when they have spoiled from sitting too long. :hurl: that generally occurs from Over preparation.

FYI: Perfectly fresh tomatoes and be contaminated with ecoli if they are cut with, or on contaminated surfaces. It has nothing to do with being rotten.

Perhaps the tomatoes were diced and then vacuum sealed? I don't think Salmonella can survive the canning process. (I'm trying to remember my microbiology lectures from 30 years ago! ;))

Again, Salmonella (and E-coli) has little or nothing to do with the "freshness" of the food....although there are many other nasty things under the heading of "food poisoning" that might!

A word of warning....don't EVER eat a meal with a Parasitologist ( or after studying anatomy)... :hurl: Sometimes, ignorance IS bliss! ;)

I totally agree my sister in law was a pathologist and she tells me
all the time about organisms. and my mother in law is a registered
nurse which can also be bad for your health.

Not that it adds anything to what already has been reported, but below is the original report from the Centers for Disease Control website (it was in the August 9, 2002, Morbidity & Mortality Weekly Report). If you wanna have more food safety fun, you can check out the recall lists at the fda and usda websites.

The report:

Outbreak of Salmonella Serotype Javiana Infections ― Orlando, Florida, June 2002

Clinicians should consider salmonellosis among ill transplant recipients who attended the 2002 U.S. Transplant Games.

On July 16, 2002, two cases of Salmonella serotype Javiana (S. Javiana) infection were identified among persons who had attended the 2002 U.S. Transplant Games, held at a theme park in Orlando, Florida between June 25 and 29. The Transplant Games is an athletic competition that was attended by approximately 6000 people, including 1500 transplant recipient athletes. The results of an ongoing investigation have identified 141 illnesses in 32 states among persons who attended the Transplant Games. Preliminary findings have implicated diced Roma tomatoes supplied to the theme park as the likely vehicle for this outbreak. Physicians should consider salmonellosis among ill transplant recipients who attended the 2002 U.S. Transplant Games, particularly because persons with impaired immune systems are at increased risk of severe infection.

Okay, okay, I should've paid more attention to if they were fresh or canned earlier in the post...

Thanks bearboysnc - that is what I was talking about! :)
