I saw a few, but I was fairly young at the time... did it involve one undercover contestant, or something like that?

Yep. Lots of contestants competing together to earn money that went into a "pot". The Mole tried to sabotage the missions so that no money went into the pot, all the while, keeping his/her true identity secret. At the end of each day, everyone took a test on who they thought the mole was based on the activities of the day. Whoever got the fewest amount of answers correct was kicked out the next day.

And it was hosted by Anderson Cooper, who is a pretty cool guy all together.

I remember that show. I forget how many seasons there were but I do remember that the mole (or one of them) was from a town a few over from mine. After the show was over the paper did this whole thing about her.

There were only two seasons, and then some dumb "celebrity" seasons.

No, she was the first. I remember because I was really surprised that time. The second season I had the guy picked out. The first, I had no idea who it was.
