Coco became the #1 movie of all-time in Mexico, and it made almost $190 million more worldwide than Ratatouille.The difference between rat and coco is that rat was being build in Paris. Since the movie is 59th biggest movie in France and it has bits of French culture. Epcot only is getting that ride, because they already have it somewhere, they just need to copy it.
Coco was also a pretty big succes, but maybe they're not sure if a lot of people are interested in a Coco ride. It is kinda hard to explain.
You’re right, though, that laziness is the reason Rat is coming to Epcot. As someone who’s experienced it, I think it’ll be anticlimactic as a follow-up to Rise and (likely) MMRR, but it fits well enough.
Would be happy to see Coco receive an attraction, and at a minimum the experience could be brought to Pixar Pier and/or Shanghai (China loved the movie too) if Disney’s looking for efficiency.
