My impression is that Disney is pretty open about adding IP everywhere being their MO. Didn't Iger say that was what separated Disney Parks from their competitors in his subtle dig at Expedition Everest?If trying to say "Disney isn't adding IP everywhere" means you have to resort to pointing at gift shops and restaurants, you've lost the debate.

Not sure about the first statement since I've never been to that park. But, WOW, I LOVE Mystic Manor from watching videos online. His impression of theme parks ("stupid entertainment for stupid people", "some generic coaster themed to India or something") shows he doesn't have the first clue as to what they are about. To him, it's about "riding the movies" and being inundated by movie IP to remind you to buy something.

Not sure if you’re trying to make some point here. None of those are even a new ride, never mind a big-budget headliner. There’s no denying that Everest is the last original ride and Bob Chapek and co. have no faith in something original to pull crowds (despite original movies being made).As part of the EPCOT 'upgrade,' the things that were meant to be and not part of an existing movie IP:
