Always a looooong wait to get a table.I'm curious about the Din Tai Fung choice. We've got a few here and demand far outstrips the ability of their staff to handle orders quickly. Or sometimes correctly. I mean, it's not bad food (maybe a little bland and single-flavored) but with to-go orders averaging 30+ minutes at two of the locations here (table service on a Saturday can be the same), I'm not sure how well that'll translate with park guests schedules.

Din Tai Fung is Taiwanese and is authentic food from what I know. It's probably no different from dumplings at any decent restaurant I'd imagine.I've had Earl of Sandwich. It was an okay expensive sandwich. It was better than what they serve in the park. Compared to other retail sandwiches though, it was a little better than Subway but not WhichWich or Firehouse sub level.
Remember when everyone went crazy of P.F. Chang's? It's the same thing with Din Tai Fung. It is not real Chinese food.

Din Tai Fung specializes in xiao long bao aka soup dumplings. It's a whole thing. Personally I am not a huge fan of Din Tai Fung... they take pride in having thin wrappers, but I like mine a bit thicker. It's the new cast member lounge complete with hot tub, boiler for brewery and multiple TVs. Disney takes care of their cast members.I've been pondering this recent Downtown Disney permit for Building DD, which is the Star Wars Trading Post/old Rainforest Café:

So Disney is taking a hefty chunk of the retail space and converting it for CM use? The valuation for the project is $487,500.00, which made my eyes pop a bit. And no mention of converting available space upstairs.
