I would suggest...

1. California Grill, make reservation for 1 1/2 hour before the fireworks.
2. Yachtsman Steakhouse, and stroll the boardwalk & resorts after. You could even stop at Beaches & Cream for dessert after!
3. Boma/Sanaa, AKL is beautiful with Xmas decor.
4. Be Our Guest, Magic Kingdom. We very much enjoy the TS dinner here but the QS lunch is highly rated too.
5. Artist Point or HDDR are enjoyable and would allow you to see the xmas decor at the Wilderness Lodge or Ft. Wilderness.
6. Mama Melrose/Hollywood Brown Derby with the Fantasmic Dining Package are great options. 50's Prime Time too.
7. Tusker House Breakfast... do it! Won't regret it.
8. Anywhere in Epcot, really..
9. Raglan Road gets great reviews, we like Bongos personally.

@englanddg and @CAPTAIN HOOK I was mainly after just a list of the best places to go so the recommendations I've got are great. I don't know which days are going to have EMH's yet, but I definitely won't be winging it and put together a schedule for each day a month or so ago using the crowd calendar. I'll wait and see if the EMH's will make a difference when I know them.

I like to organize by area and then by what appeals to me on the menu

AK day - Sanaa, Boma, jiko
DHS day - 50s primetime, brown derby, flying fish or yachtsman
MK day - The Wave, Kona, Citricos, 'Ohana
Epcot - this is a tough one. There are TONS of great choices

Throw a character meal in there for fun over food.
