1 Day, No Parks, What to do?

The hubs has to go to Merrit Island for work over spring break and since I'm a teacher and will be off, I'm gonna go along for a few days! Yay! We just got back from a trip to the world in December so we don't have a lot of extra money right now for trips. We're going to spend that Sunday doing Disney things, but no parks. What would you do to fill the day?

So far I was thinking of having breakfast at Kona and go to Splitsville. What else? Or would you recommend something different? It will be just DH and I. We're leaving the kids with grandma!

Just hang around your hotel. Do the pool, maybe go out on a boat (if your hotel has a marina).
Go resort hopping. Especially the monorail resorts, so you can enjoy some monorail time as well.
Go to Fort Wilderness and see the horses, do a wagon or carraige ride (during the evening if you are there)

We won't actually be staying on resort. DH's company will be paying for a hotel closer to Merrit Island, but we want to drive to the world for the day. I think you're right about taking some time for the monorail!

I'm almost positive this will happen, but I can't go down there and not try to be immersed in at least a little bit of magic!

Definitely resort-hopping of some kind. I always love checking out the resorts we haven't been to yet or ones we haven't stayed at in a while -- we used to just drive around to them when I was a kid and we'd stop to eat at one of them from time to time.

Normally we would resort hop using Disney transportation, but since we aren't staying resort what would be the best plan for parking? Park at DtD and use Disney transport the rest of the day? Can you just park at resorts you aren't staying at?

To be honest I'm not sure what the story is these days, as the last time we did this was well over 10-15 years ago and i am not current on what the rules are for resort parking these days. However, I do believe that you can park at resorts if you are eating at that particular place (others can probably jump in and clarify here.) As far as where to park if you're going to hop around from one place to another, I would think DTD is your best bet for parking but again, others will need to clarify for me as it's been ages since I had a car with me in WDW.
