1 Day, No Parks, What to do?

The hubs has to go to Merrit Island for work over spring break and since I'm a teacher and will be off, I'm gonna go along for a few days! Yay! We just got back from a trip to the world in December so we don't have a lot of extra money right now for trips. We're going to spend that Sunday doing Disney things, but no parks. What would you do to fill the day?

So far I was thinking of having breakfast at Kona and go to Splitsville. What else? Or would you recommend something different? It will be just DH and I. We're leaving the kids with grandma!

dowtown disney or bordwalk for dinner , or explore the resorts!, gf , poly , etc

We are doing something similar only we are spending the night at a Disney Resort. So we are going to spend lots of time at the Resort. We are also going to go to Downtown Disney and just go exploring and wandering and maybe do a game of mini golf. Maybe see a movie. We are dining at a character meal so we get to see Mickey.
