Shot during the first Illuminations on New Years Eve, and my first successful attempt at a long exposure.

I generally go for the middle or back of the theatre seats. Watched Captain EO from the front row once and the 3D effect looked a bit off - maybe it was my eyesight or the glasses, but it didn't look as good as it did from the middle of the theatre.
The "Two Brothers" segment of the American Adventure, and the "Peace on Earth" tag for Illuminations. Those are the two that really get to me every time, and my first time seeing the ending of Fantasmic! got me as well (though now it really pumps me up after walking around the park all day!).
Its used for both the F&W and Flower & Garden Festivals.
Went in there a couple of weeks ago during the festival and its sad to see whats become of it. All its good for now is a nice place to get out of the heat for a few minutes.
Here's a few suggestions (based on where I've eaten):
EPCOT - Rose & Crown, Le Chefs de France, Biergarten, Tokyo Dining, Restaurant Marrakesh, Via Napoli
Magic Kingdom - Crystal Palace, Cinderella's Royal Table
DHS - Brown Derby
The second floor of the Japan Pavilion does provide a great view. Also, if you eat at Tokyo Dining during Illuminations and are lucky enough to snag a window seat, you will have a nice view of the fireworks - they dim the lights inside so you can see clearly.

Tokyo Dining and Biergarten are my favourites. The bento boxes and sake were excellent, and we had a window seat during Illuminations, which was amazing! As for Biergarten, the food and beer selections are great and the atmosphere is very friendly.
I went to each SW Weekend last year and as most have stated, the Star Wars specific events will have the most crowds in DHS. There are so many SW related events going on during the day that will keep most fans busy. If you do end up going to DHS on a SWW day, I highly recommend the Hyperspace...
Here's one more vote for Never. The only thing I'd want to see remotely close to a coaster in EPCOT would be a peoplemover system that went around FW, but that's also something that would probably never happen.
