I would fortify the castle and then name myself king of the realm. I would slowly recruit followers and create a new society. We would build defenses around the park and establish it as a new kingdom. A magic kingdom if you want to give it a name. Don't ask me how I came up with that title, it just came to me.

I'd go to Kouzzina by Cat Cora because, based on what everyone says, no one goes in there, and that might include zombies.

The People Mover seems pretty safe zombies can't climb and I would break the escalator slope thing.

Quick stop at Mitsukoshi for whatever blades are available (hopefully a Tachi, even saw a Naginata once). Then onto the Cali Grill and disable elevator and doors. Tactically, one of the easiest places to control limited access points.
